When I saw this recipe on for mamas I thought the kids would love it. Big kids loved it too! Here is what I used to make ours:
1 ½ lbs. ground turkey (could use beef)
1 16 oz. bag of egg noodles
1 large jar spaghetti sauce (Ragu - 2 lbs. 13oz)
15 oz. low fat ricotta cheese
2 C shredded mozzarella cheese
1 package pepperoni (3.5 oz. package)
Brown turkey meat and drain. Cook egg noodles and drain. Now would be a good time to preheat the oven to 350 (I always forget this). Spread a thin layer of sauce on the bottom of a 9 x 13 pan.
Let the layering begin! Pay attention! Spread half the noodles, half the meat, half the sauce, the remaining noodles.
Spread on the ricotta cheese (I didn't use the entire tub), remaining sauce, 2 C mozzarella cheese and top off with the pepperoni.
As you can see I covered the entire casserole with pepperoni but you can put as little or as much as you like. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for another 15 minutes. Remove and let sit for 10 minutes. I know it's hard to wait 10 minutes but you really need to or it will fall apart. Not to mention it's smokin' hot if you don't wait!
