Pancake Muffins

My kids love pancakes.  I hate the sticky mess everywhere.  We're talking in their hair, all over their hands, all over the counter, all over the walls and all over the dog.  Yes, it happened.   Came across this recipe for Pancake Muffins on Pinterest where you bake the syrup in the pancake mix and thought YES!  The first recipe I tried only needed pancake mix, syrup and water.  How easy is that?  What could possibly go wrong?

Epic Fail

Well that didn't work.  Normally I would think this was just me and my great baking skills but something didn't seem right with this recipe.  Thankfully I came across another easy recipe at Lady with the Red Rocker.  It has only four ingredients but it works! 

You can add whatever toppings your family likes.  We love blueberries and chocolate chips.  Here is your easy (and working) recipe:

Pancake Muffins {Printable}

2 C Bisquick
2/3 C Milk 
2 Eggs
3/4 C syrup
Toppings – chocolate chips, blueberries, bacon, sausage, ham, bananas, nuts, etc.

Preheat oven to 350°.  Mix Bisquick, milk, eggs, and syrup together and pour into muffin pans with cupcake liners. Fill each cup half way, and top with your favorite topping.  Bake for 14-15 minutes or until a toothpick inserted comes out clean.  Makes 17-18 normal sized muffins.

Teri's Tips:
  • Don't mix the toppings into the muffin mix.  For some reason they fall to the bottom while baking.
  • I didn't have Bisquick so I used waffle mix.
  • I used both a normal size muffin tin and a mini muffin tin for this recipe.  Mini muffins take about 10 minutes to bake.
These are really yummy and disappear fast.  Best part ------ no sticky dog!

This week was pretty much all about baseball.

This is Denver's idea of putting his uniform in the laundry room.

Denver isn't a pitcher but was brought in to pitch the last inning. We were up 5 runs but it was still nerve racking. He was very calm and didn't give up a run!

Brought home the 1st place trophy!

Okay, maybe it wasn't all about baseball. Devon and I did manage to have lunch and get a pedicure.

Our first free night Steve and I were able to get out alone for some sushi. Pretty good week!

Cucumber Salsa

This is one of those recipes you don't tell the kids what is in it and just have them try it.  All three of mine like it but would stop eating it if I told them it has onions.  Not sure where I got this recipe but it was called Lime Cucumber Salad.  To me it's more like a salsa so we eat it with chips.

Here is what you need:

2 large cucumbers
1/4 C finely diced onion
3T fresh cilantro
Juice of 1 lime
Olive Oil - just a dash
Salt to taste

Peel cucumbers and chop into small cubes.  In a bowl toss with onions, chopped cilantro, lime juice, olive olive and salt.  Chill to serve.

Pizza Casserole

When I saw this recipe on for mamas I thought the kids would love it.  Big kids loved it too!  Here is what I used to make ours:

1 ½ lbs. ground turkey (could use beef)
1 16 oz. bag of egg noodles
1 large jar spaghetti sauce (Ragu - 2 lbs. 13oz)
15 oz. low fat ricotta cheese
2 C shredded mozzarella cheese
1 package pepperoni (3.5 oz. package)

Brown turkey meat and drain.  Cook egg noodles and drain.  Now would be a good time to preheat the oven to 350 (I always forget this).  Spread a thin layer of sauce on the bottom of a 9 x 13 pan.

Let the layering begin!  Pay attention!  Spread half the noodles, half the meat, half the sauce, the remaining noodles. 

Spread on the ricotta cheese (I didn't use the entire tub), remaining sauce, 2 C mozzarella cheese and top off with the pepperoni.

As you can see I covered the entire casserole with pepperoni but you can put as little or as much as you like.  Cover with aluminum foil and bake for 30 minutes.  Remove foil and bake for another 15 minutes.  Remove and let sit for 10 minutes.  I know it's hard to wait 10 minutes but you really need to or it will fall apart.  Not to mention it's smokin' hot if you don't wait!

Bye Bye Elementary School

Can't believe another one of my babies will be headed off to middle school in August.  Seems like yesterday we were taking Delaney to her first day at preschool.

Look at that little cutie!  She started to have a meltdown when we were leaving the first day.  Daddy took her aside, had a little chat and she was good to go.  She loved preschool and had no desire to go to elementary school when the time came. Here is a picture her kindengarten teacher took on the first day to be placed over her cubby.

This picture cracks me up!  Can you tell she's not happy?  Thankfully after a week she turned around and started liking school.

If you grew up around the time I did (long time ago) you completed 5th grade and moved on to middle school.  No biggie.  Not anymore!  Now you have a big 5th grade graduation.  They asked that everyone "dress appropriately".  Delaney is a total tomboy and dressing up to her means wearing jean shorts.  I was totally surprised when she suggested wearing a dress.  I actually thought she was messing with me. 

Her friends were shocked!

After the ceremony we took her out to lunch.  As you can tell by the picture, she was done with the dress.  She was beyond excited to receive a cell phone as a gradutation gift. Thank goodness for unlimited texting plans!

Congrats Delaney!  We are very proud of you!
