Brussel Sprouts Are Good!

I know what you're thinking.  Brussel sprouts good?  No way.  I thought the same thing when my husband came home with a big bag of them.  I mean it's bad enough I have to eat healthy stuff I like all the time (on 17 Day Diet) and now I'm going to eat brussel sprouts.  That's just great.  Turns out they are great.  Now I'm not saying they are like eating a big 'ol piece of chocolate cake but they are good.  Another bonus is they are easy.  All I did was cut off the end of each brussel sprout (kind of like the end of a head of lettuce), cut them in half and toss with olive oil, salt and pepper.  Now I hate when I read a recipe online and they don't give you the exact amount of the ingredient to add and expect me to figure this out.  However, I'm doing the same thing right now.  It depends on how many you are roasting.  I put in enough olive oil to coat each brussel sprout.  I'm not a big fan of pepper but if you are add a bunch.  I feel they need extra salt to taste good but always start with a little and add more after they are done.

Put all those lovely sprouts on a baking pan and bake at 400 degrees for 20 minutes. 

They are even better reheated the next day.  So before you diss the brussel sprout give it a try!

Finally found a day that my friends and I could meet up to celebrate me getting older.  This is what the person sitting next to me had for dinner.  Why is it what someone else orders always looks better than what you ordered?


Devon will be running her second 5K this weekend.  She has been working hard to get prepared!

Tuesday I went with Devon's 3rd grade class to tour Chick-fil-A headquarters.  That place is awesome! 

They even have a Batmobile!

The next day I went with Delaney on the 5th grade field trip to Georgia Aquarium.

Love the big aquarium window.  Look how big this whale is compared to the guys swimming around.

The following day I participated in our community garage sale.  Really glad one man's junk is another man's treasure!

Instagram Friday

I take a ton of pictures with my iPhone.  Just recently I started using Instagram.   Please tell me you have heard of Instagram.  No?  You seriously need to get out more.  Instagram is a photo sharing app where you can change the picture with different filters and share on Instagram, Facebook, Twitter, Flickr, and a couple other places.  Tons of bloggers do this thing called InstaFriday where you show your week in Instagram pics.  Thought I would join the fun:

Crock Pot Sweet & Sour Meatballs

If your house is anything like mine then you have to have dinner ready quick and be out the door to one of the kids events in the early evening.  My lack of planning has resulted in way to many trips to the drive thru for dinner.  This recipe requires little prep work and only takes 4 hours in the crock pot.  This leaves you free to help with homework, find a missing uniform or whatever else eats up your time after the kids get home.  Not to mention my ENTIRE FAMILY liked it.  One word:  Wow!

Crock Pot Sweet & Sour Meatballs {printable}

Original Source:  Make 5 Dinners in One Hour

1 large bell pepper
1 20 oz can pineapple chunks
3 T vinegar
1 T soy sauce
½ C. brown sugar
3 T cornstarch
1 lb frozen meatballs

Place frozen meatballs in crock pot. Chop bell pepper into bite size pieces and place in crock pot. Pour in pineapple chucks with juice. In a bowl mix together vinegar, soy sauce, brown sugar and cornstarch. Pour in crock pot and stir. Cook on low for 4 hours (I stirred at hour 3).  Serve over rice.

Teri's Tips:
  • I used turkey meatballs which taste just like beef but are healthier.
  • I used reduced sodium soy sauce because regular is just to salty for my taste buds.
  • Next time I going to reduce the amount of brown sugar since we like to get our daily dose of sugar elsewhere.

Grand Cayman ~ Stingray City

Our first stop while on the Carnival Glory was Grand Cayman.  After reading about several things to do there we chose taking a boat out to Stingray City.  We booked a tour with Captain Marvin's.   They have great reviews on TripAdvisor and booking directly instead of through our cruise ship saved us over 50%.  Their office is located less than a block from where the boat docks so it was an easy walk.  They put you on an air conditioned bus (it's hot there!) for a short drive to where you catch the boat.  You take about a 20 minute beautiful boat ride out to the sandbar where all the Stingrays are located.  As you can see there are a lot of people out there with you.

One nice thing about this Captain Marvin's is you are on a large boat with about 20 people.  We saw other companies with smaller boats that had twice the amount of people.

Someone was a little scared at first.

The Stingrays are very friendly because they get fed.  Don't worry, they eat fish not people.  They were swimming around us the entire time. 

The water is crystal clear and about waist high deep so it is perfect for kids.  The guys that run this show get in the water, grab a Stingray and let everyone take turns holding and kissing it.  Say what?!  Yes.  You kiss the Stingray for 7 years good luck.  Kind of weird but fun.  They have a photographer that takes pictures of all this action and after viewing the pictures you can purchase all of them for $45.  Our disposable water proof camera did okay but the best shots came from the photographer.

The kids and I had fun watching Steve chase after a Stingray trying to get a picture.  Those suckers are fast!  Steve, not so much.  Somehow he managed to get one.

At last Steve and I were able to hold one.  They feel like sandpaper on the top and slimy on the bottom. 

This is a must do in Grand Cayman.  Great way to spend the day and get 7 years good luck!

First Day of Spring Break

This past week my wonderful children were on spring break.  We booked a cruise on the Carnival Glory.  Our boat left out of Miami so we decided to drive down the day before.  Ugh!  At dinner that night I thought I earned a little big cocktail. 

The next day we finally get on the ship!

We had one day at sea before reaching our first port.  That day just happened to be my 46th birthday.  Holy cow!  How did I get that old while acting so immature all these years?  The great people at Carnival had the entire ship dress up for my birthday.

The above picture is a little blurry because someone, who shall remain nameless, is not the best photographer.  Hmmmmm, who could that be?

We had a great relaxing first day on the ship.  Will post about our first stop, Grand Cayman, in a few days.  It was my favorite place!
