Looking over my blog it appears I make a lot of sugary sweet stuff. I swear I make healthy stuff too! Following the 17 Day Diet we eat healthy Monday through Friday lunch. Friday dinner until Sunday dinner we can have the things that are not so healthy in moderation. Works for me! Came across this recipe at So Wonderful So Marvelous and decided to give it a try. We really liked the favor the honey gave the carrots. Will definitely be making these again.
Here is what you need:
2 pounds baby carrots
Seasoning - I just used salt & pepper
3 tablespoons honey
1 teaspoon balsamic vinegar
Mix baby carrots with seasoning and a little olive oil and place on baking sheet. Roast in 400 degree oven for 20 minutes. Pull out of oven and drizzle with 2 tablespoons of olive oil, 3 tablespoons of honey and 1 teaspoon of balsamic vinegar and stir. Put back in oven for another 5 minutes.
- I baked mine for an extra 5 minutes so they were a little less crunchy.
- I didn't add the olive oil the second time because after pulling it from the oven it didn't look like they needed more. You be the judge!
